Over the years, spotting Robb Sandberg working the floor of a restaurant has become an indication that, yes, you have entered the grounds of one of the most talented chefs in town. He's held posts serving at some of the best chef-driven restaurants in Minneapolis, such as D'Amico Cucina, Auriga, Sea Change, Porter & Frye, and currently, Piccolo. And as for Sandberg, well, he's the ultimate waitron to deliver the goods. "I try to be some sort of well-informed clown," says Sandberg, who dines out as a kind of R&D. "You couldn't work at a car dealership selling Mercedes if you've only driven a Chevette." And now he hangs his apron at Piccolo, which he says is a testament to both chef Doug Flicker's talent and Sandberg's stubbornness. "He hated my guts for a while," says Sandberg, who worked with Flicker at Auriga. "We can laugh about it now.... I'm flattered to call him a friend and a boss and a hero in the culinary world." We're confident Flicker shares the same sentiment.
