Ordering anything other than fried chicken at Revival feels like sacrilege, but diners who go generic and get the burger are rewarded with a superlative Southern-style treat. Chef Thomas Boemer grinds together short rib and brisket to make a juicy, immaculate patty that comes on a generously buttered bun. Toppings? Strictly the classics: bread and butter pickles swimming in a melty pool of orange American cheese and topped with two crispy-to-the-point-of-caramelization strips of bacon. It may seem underwhelming on paper, but the classics never retire. They only improve with interpretation, and right now, Revival’s burger is at its apex.
