After multiple setbacks in their planning stages and recent battles with City Hall over an exemption from city storm water management regulations, downtown St. Paul institution Cossetta Italian Market will move forward with its $10 million expansion, reports the Star Tribune.

Owner Dave Cossetta says the restaurant is aiming to open part of the new space, and move seating to that area, by the end of August. Here are some of the new features you can expect once the project is completed some time next year:

The always bustling deli and pizza-by-the-slice line will remain, but Cossetta plans to expand the menu significantly, adding arancini, pastas, and a gelato and espresso bar. It's also adding a whole new area, called the rosticerria, for pre-made meals and other takeaway options, sized for a single person or an entire family.

Seating in the restaurant will increase by 50 percent, and the well-stocked Italian market is getting a major expansion, more than tripling in size. For take-home focaccia, cannoli, and other pastries, Cossetta will also feature an on-site bakery, and as if that wasn't enough, the restaurant is considering putting a wine cellar/store in the basement. Talk about a one-stop shop. This new and improved Cossetta sounds like the ideal place to go when throwing together a last-minute Italian-themed dinner party.
