As a countdown to the Best of the Twin Cities 2016, coming April 20, we're serving up 100 of our favorite local dishes. Here are the best dishes, drinks, snacks, and sweet treats we encountered over the last year.

Like the second steep on the teabag or lining the coffee basket with toilet paper, ordinarily we think of quiche as a make-do dish, not a thing to get overly agitated about. If you've ever worked in a restaurant, you know it's where the asparagus trim goes, the nubs of cheese that have no other homes, the ugly tops of the bell peppers. All of it stirred up into some eggs and crust to become a quickie thing to have on the go and forget. 

But in the capable hands of the French bistro chefs at Le Town Talk, quiche becomes what it was perhaps meant to be— a billowy custard with delicate curd set gently into a crust buttery and fragile as shortbread. This as much wicked, sustaining treat as an impeccably baked slice of pie. A pile of practical and astringent field greens reminds you that this is part of a balanced brunch.
