93: The Everything Bagel from Rise Bagel Co.

This might just be the Holy Grail of Minnesota bagels.

This might just be the Holy Grail of Minnesota bagels.

As a countdown to the Best of the Twin Cities 2016, coming April 20, we're serving up 100 of our favorite local dishes. Here are the best dishes, drinks, snacks, and sweet treats we encountered over the last year.

Telling you how good the everything bagel from Rise is might constitute cruel and unusual punishment since you can’t just go out and buy one. In fact, the next time bakers and sisters Jen and Kate Lloyd will be offering their crusty beauties is on Feb. 25 at the North Coast Nosh XIV. They don’t have a storefront, so they sell their goods at the Fulton Farmers Market and other food-related gatherings.

A few years ago, Jen and Kate decided Minnesota needed a good, traditional hand-rolled bagel. After making pilgrimages to bagel meccas San Francisco, New York, and Montreal, they spent a good long time developing a recipe that met their standards. The bagels are made with locally grown and organic ingredients, and they’re always fresh. Jen and Kate start the process the night before they’ll be selling the bagels in order for them to be ready to bake in the morning. After being shaped, the bagels are boiled in a malt barley wash before they are put in the oven, emerging with a crisp crust, fluffy interior, and solid chew.

You can’t go wrong with any of the bagel varieties, but the everything is the star of the show. Coated generously with sesame seeds, poppy seeds, onion, garlic, and salt, you get multiple bursts of flavor in every bite. All you need is a schmear of cream cheese to complete the picture. Check the calendar on the Rise website to find out where and when you can try one for yourself. One piece of advice: The bagels regularly sell out, so show up early to be sure you can satisfy your carb craving.
